It's very easy to do the roast beef. I've found that the shape of the roast is most important. A uniform sized round roast cooks more evenly I think.All you need is the roast beef, kosher salt (the coarse granule type)and wax paper. Tear off a large sheet of wax paper and pour a generous amount of the salt on the paper. Roll the roast in the salt and cover all the meat with the salt. Pour some more salt on the top of the roast and place a second piece of wax paper on the top then twist the ends to seal in the salt with the roast.
Now place the wax paper wrapped roast into a nice bed of coals or wood coals. 15-20 minutes a pound is usually about right. I turn the roast every 15-20 minutes to try and get even cooking. After you take it out of the fire, scrape all the burnt salt off and rinse the roast in water.
